By ‘authentic’ we mean staying true to the traditional method of cooking and preparing of Indian food. There are slight variations between westernised and traditional Indian cuisine. The difference lies in the combination of flavours used whilst preparing the food, all the ingredients within a particular dish have contrasting flavour compounds, which makes the taste so distinct. It leaves a different flavour, sometimes texture that is different to the westernised equivalent.
Now to our dish of the month!
We have chosen the King Prawn Gassi for February. You need to be a coconut lover to try this dish as coconut is a common ingredient used in the coastal area which this dish originates from. King Prawn Gassi consists of Mangalorean-style king prawns, cooked with grated coconut, coconut milk and spices finished with a tangy blend of raw mango and chopped ginger … Mmm delicious!

This popular, coastal delicacy from Mangalore rates on the spicier side of the spice rating. The traditional ingredients include Red Chilli Pepper (Deggi Mirch), Green Cardamom, Black Cardamom, Cinnamon stick, Coriander Seed, Garam Masala, Bay Leaf, Cloves, Turmeric, Fenugreek, Cumin, Asafoetida, Funnel Seed, Mustard Seed, Nutmeg and finished with our very own Special Spice.
Mangalorean cuisine is largely influenced by South Indian cuisine and King Prawn Gassi is a very famous dish in South India. The main difference between Northern and Southern Indian dishes is you’ll find lots of bread, such as, naan bread and curries in the North, just like what you expect in Indian restaurants here in England. Whereas, generally, South Indian cooking is based around rice and stews, such as dosa.
